Vietnamese food is all about freshness and flavour. Rather than oil and dairy, it focuses on balancing flavours from herbs, vegetables, and spices to compliment its various dishes, and is largely considered one of the healthiest in the world.

Chef Ha Nguyen is a passionate advocate of Vietnamese cuisine, and he aims to share this love and knowledge with the public. He opened OTAO Kitchen in Richmond, Melbourne, and now offers both public and private classes where people can learn how to prepare traditional, authentic Vietnamese dishes.

“I created OTAO Kitchen as an extension of my passion for food and to share this passion with others,” Ha writes on his website.

“Food plays an important role in Vietnamese culture and is central to our family life. Sharing a meal with family and loved ones is a traditional and happy experience. I wish to extend this experience to you and welcome you to OTAO Kitchen.”

His cooking classes cover a range of different Vietnamese dishes, including the Street Foods of Saigon, Hoi An Beach Food, Hanoi Classics, and French-inspired Vietnamese. Each class explores a different aspect of Vietnamese culture and the influence it has on the food of each region, and gives participants the chance to cook each dish themselves.

“Our cooking classes offer you an intelligent, thoughtful and authentic cooking experience. One that is fun, adventurous and suitable for people of all ages, backgrounds and levels of cooking skill.

“By coming to our classes you will learn to cook delicious recipes from across Vietnam and you can look forward to enjoying what you cook in a relaxed and friendly atmosphere with friends. The skills you will learn are fully transferable to your own kitchen and we look forward to hearing and seeing what you create at home after the class.”

Not only does Ha teach you how to cook, he also holds classes that double as market tours, taking students through the renowned Little Saigon area of Melbourne to purchase fresh ingredients to use in their cooking later in the day. The Taste of Vietnam class is a fun, practical approach to Vietnamese cuisine that ensures you come away with knowledge you can apply in your own kitchen.

OTAO Kitchen also caters to corporate and private events, and holds classes designed to introduce children to simple Vietnamese cooking. They are also a part of the Great Ocean Road Cooking and Lodge Retreat, hosted by the Melbourne Food and Wine Festival, where Chef Ha will host two cooking classes using fresh regional produce.
