For those amongst us who love their cheese, these workshops are a must-do.

From her home and business in the quaint little township of Cooran in the Sunshine Coast Hinterland, Dawn Couchman (Master Cheesemaker) conducts various hands-on workshops, instructing visitors in the art of making delicious cheeses.

Recently, a friend and I attended an introductory cheese-making class and had a great morning at Easy Cheesy. Dawn shares her skills and knowledge in a fun and light-hearted way, making the workshop stress-free and very enjoyable.

After a quick cuppa and some tasty homemade biscuits, we got down to the business of cheese making. Ricotta, lime cheese, mascarpone, and yoghurt were all on the agenda for this class. We also learnt how to make whey lemonade, which is full of valuable proteins and, according to Dawn, are not to be wasted.

All ingredients and cooking utensils are provided. You are asked to take containers, a cap or hair net, an apron, eskies and cooler bricks. Dawn will email you the recipes from your class, so that you can put your newly learned skills to use in your kitchen at home. No flash equipment is required at home to make these basic cheeses. All you may need to buy is a thermometer, although a coffee thermometer will suffice.

Not only do you learn how to make these cheeses (which you take home to share with friends and family), Dawn also prepares what she refers to as morning tea, but really would suffice as lunch. During this break you will get to try cheeses that Dawn has made, along with other cheesy items. You will also have the opportunity to sample the whey lemonade, which Dawn says is an acquired taste - and I'd have to agree with that!

More advanced workshops venture into the world of haloumi, feta and mozzarella. Once I master the basics, I'll definitely be heading back to Cooran to take the next step in my cheese-making journey.

Check out Easy Cheesy for further information on workshops or email Dawn at dawnc@easycheesy.com.au.
